Ingredients to make Crispy and Fluffy Four Cheese Herbed Biscuits

  • 1/2 cup cake flour
  • 1/2 cup bread flour
  • 1.5 tsp baking powder
  • 1/2 tsp sea salt
  • 1/2 tsp white sugar
  • 3/4 tsp dried chopped parsley
  • 1/4 tsp dried chopped basil
  • 1/2 cup shredded Colby Monterey Jack Cheese
  • 2 tbsp shredded Mozarella Cheese
  • 3 tbsp cold unsalted butter, cut into cubes
  • 1/2 cup milk
  • 1 tsp olive oil

How to make Crispy and Fluffy Four Cheese Herbed Biscuits

  1. Preheat oven to 200 degree centigrade. Prepare a baking pan. Line it with parchment paper or if using aluminium foil, grease it with olive oil.
  2. Combine cake flour, bread flour, baking powder, parsley,basil, sugar and salt in a mixing bowl. Add the cubed butter and mix it by hand till the four cheese flour mixture resembles coarse crumbs.
  3. Add cold milk intermittently and knead it lightly into a smooth dough. The dough should not be dry.
  4. Drop the batter onto the greased baking pan by heaping two-tablespoons measuring spoon or cup and bake in the preheated oven for 15-20 minutes until risen and golden brown. Remove from the oven and brush the tops with melted garlic butter.
  5. Serve the four cheese biscuits as a breakfast sandwich or with pasta salad or with honey.

My Tip:

Use hands to mix the four cheese flour mixture until the dough holds together. Do not use a mixer or food processor as it will oversimulate the gluten and harden the biscuits.
