Veg Navaratna

Ingredients to make Veg Navaratna

  • paneer 200 gms
  • Chopped carrots 100 gms
  • Chopped capsicum 100 gms
  • Chopped bean 100 gms
  • Green peas 100 gms
  • Cauli flower 100 gms
  • potatoes 100 gms
  • cashew nut paste 25 gms
  • magaz paste 25 gms
  • poppy seeds paste 25 gms
  • Fresh cream 100 gms
  • ginger paste 1/2 tablespoon
  • cumin seeds 1 pinch
  • cumin powder 1/2 tablespoon
  • coriander powder 1/2 tablespoon
  • Green chili paste 1/2 tablespoon
  • Sunflower oil
  • salt as per taste
  • sugar for balance
  • ghee as required
  • bay leaves 2-3
  • cinnamon 2-3
  • cardamom 2-3
  • cloves 2-3

How to make Veg Navaratna

  1. Boil the vegetables in a little salt and keep them separate.
  2. Saute the paneer and boiled cauliflower slightly and keep them separate.
  3. Heat oil in a pan and add ghee.
  4. Fry the bay leaves, cinnamon, cardamom, cloves and cumin seeds in the oil.
  5. Add the vegetables and fry them slightly at high temperature.
  6. Add the ginger paste, cumin powder, coriander powder, green chili paste and keep cooking till the oil separates.
  7. Add the magaz, cashew nut and poppy seeds paste and cook slightly. Add water.
  8. When boiling starts add salt, sugar, fresh cream and paneer. Cover the lid and cook on a medium flame.
  9. When the gravy thickens its done. Keep it standing by turning off the oven for 2 minutes. Serve hot.
