Mango Cheese Cake

Ingredients to make Mango Cheese Cake

  • 300 grams paneer
  • 1 smalll tetra pack fresh cream
  • 1/2 tin condensed milk
  • 1 packet 100 grams Gelatine
  • 1 packet of Digestive biscuits
  • 2 cups mango puree
  • 2-3 mangoes firm yet sweet
  • Few mint leaves

How to make Mango Cheese Cake

  1. Crush Paneer in a mixer, add fresh cream, condensed milk, mango puree and mix.
  2. Dissolve half a sachet of gelatine in warm water and add too to the paneer cream mix. Mix well.
  3. Crush the digestive biscuits and mix in the 50 grams of butter.
  4. Make a layer of the biscuits crush on a cake pan lined with parchment paper and refrigerate for 30 minutes.
  5. Pour the paneer cream mix onto the biscuits base and spread well.
  6. Put this to set overnight in the fridge or say at least morning to nite if having it at dinner.
  7. For the top layer: take 1 cup mango puree add the rest of the gelatine soaked in warm water.
  8. Mix well and pour to form the top layer, again keep in the fridge.
  9. Before serving cut out thin slices of the mangoes and garnish, final look of forming a rose.
  10. Finally garnish with a few mint leaves and keep the cake back in the fridge till you want to serve.
