Regular classic indian dish with a twist of spinach and garlic in bhatura dough. Chjole cooked in tamarind paste with pomegranate seeds

Ingredients Serving: 4

  1. Bhatura
  2. 2 cups all purpose flour
  3. 1 cup blanched spinach
  4. 10 garlic fine pasted
  5. 1/2 teaspoon baking powder
  6. 1/2 cup soar yogurt
  7. 1/2 cup baking soda
  8. Salt to taste
  9. 2 tablespoon oil
  10. Refined oil for frying
  11. For chhole
  12. 2 cups boiled chickpeas
  13. 1/2 cup tomatoes puree
  14. Onion 1 fine chopped
  15. Ginger garlic paste 1/2 tbspoon
  16. Chhole masala 1tbspoon
  17. Tamarind paste 1 tbspoon
  18. Anardana 1 tbspoon
  19. Salt to taste
  20. Oil 2 tbspoon
  21. Pinch of sugar

Instructions

  1. At 1st we will make bhatura dough
  2. Mix every thing in a bowl all dry ingredients well
  3. Now add spinach and yogurt with oil make a smooth dough
  4. If see its too dry can add some more yogurt
  5. When its done cover with wet cloth and let it rest for one hour.
  6. Now we will start chhole
  7. Heat a pan with oil
  8. Add cumin seeds than onion and ginger garlic paste to it saute well
  9. Now add tomato puree and Chhole masala and cover the pan with lid and cook for 5 minutes
  10. Now add tamarind paste and anardana mix Well
  11. Add 1cup water and chickpeas and cover with lid and cook for 10 minutes
  12. Ads salt and a pinch of sugar and again cook for 5 minutes
  13. If very thick can add more water
  14. When done add kasuri methi and close the flame
  15. Now we will make bhatura
  16. Heat good amount of oil in pan
  17. Make small balls from dough
  18. Start rolling from rolling pi if needed add some flour dry or the oil if sticky and give bhatura shape and fry on high flame
  19. Keep it little thick for better looks and fluffy
  20. Serve hot with onion rings
