Ricotta and Almond Cake

Ingredients to make Ricotta and Almond Cake

  • butter - 1/4 cup
  • Dark chocolate - 90 gms
  • Ricotta - 300 gms
  • eggs - 2
  • sugar - 1/2 cup
  • milk - 3/4 cup
  • almond meal - 2 cups
  • Baking Powder - 1 tbsp
  • Vanilla essence - 1 tsp
  • Cocoa powder for dusting pan
  • Sliced almonds for garnish

How to make Ricotta and Almond Cake

  1. Preheat the oven to 190 degree centigrade. Grease a 9 inch pan and dust with cocoa powder.
  2. In a small pan, melt butter and chocolate. Let it cool.
  3. In a large bowl beat ricotta with eggs and sugar for 2 minutes. Mix in the cooled chocolate and milk. Add in vanilla essence.
  4. In another bowl mix ground almonds and baking powder. Gradually mix into chocolate mixture.
  5. Pour into cake tin, top with sliced almonds and bake for 45-50 minutes.
