Baigan Bharta

Ingredients to make Baigan Bharta

  • Eggplant/baingan 3 medium sized
  • onion 1 big
  • tomato 1
  • Crushed groundnuts 1/4 cup
  • coriander chopped 1 bunch
  • Fresh or frozen peas (optional) 1/2 cup
  • lemon juice 1 tsp
  • Cheese 1 tbsp
  • jeera powder 1/2 tsp
  • Garam masala 1/2 tsp
  • red chilli powder 1 tsp
  • salt as required
  • oil for cooking

How to make Baigan Bharta

  1. Roast baingan on direct flame, then remove it's burnt skin completely.
  2. Chopped onion and tomato. Keep aside.
  3. Heat oil in a kadai, fry onion till golden. Add spices then add tomato chopped.
  4. Finally add the baingan and mash it well.
  5. Grate some of the zest of lemon and its juice all over it. Add crushed groundnuts, fresh or frozen peas (optional)
  6. Add 1 tbsp of cheese over it and garnish with fresh coriander.
