Stuffed Brinjal

Ingredients to make Stuffed Brinjal

  • Stuffing masala ingredients:
  • Grated coconut 1/2 cup
  • Kashmiri red chilli - 8
  • garlic cloves 4-5
  • jeera 1/2 tsp
  • coriander seeds 1tbsp
  • salt to taste
  • Other Ingredients:
  • Brinjal small 10
  • onion big 3
  • tomato medium 1
  • Garam masala 1/2 tsp
  • oil

How to make Stuffed Brinjal

  1. Take a pan. Add all the ingredients listed under stuffing masala and roast for a while. Cool it and grind it coarsely adding salt. Add very little water while grinding
  2. Wash and slit brinjals criss cross but intact from bottom.
  3. Stuff the masala into the brinjals and keep the aside.
  4. Take a wok. Fry onions till translucent. Then add finely chopped tomatoes and fry till soft. Add garam masala and little salt as we have already added salt to the masala.
  5. Add little water, stuffed brinjals and remaining stuffing masala and cook covered.
  6. Serve hot with rotis or rice.

recipe for stuffed brinjals very quickly,without onion & tomatoes, just cut the brinjals criss cross keeping bottom intact, keep in water, heat oil on a pan add cumin seeds,let it splutter , add aesfotida powder, put the brinjals, add salt, red chilli powder, turmeric powder, coriander powder and some water just to cover brinjals, cover with lid , cook till brinjals are just to soft, add amchoor powder, mix and cook for 2-3 minutes , keep covered for a while so that all flavors are mixed, serve with roti/ parantha
