Ingredients to make Tricolor Salad Rollups

  • carrot 2
  • cucumbers 2
  • radish 1
  • spring onion 1
  • Red bell pepper 1/4
  • Chopped cabbage 1/4 cup
  • garlic Mayo 2-3tbsp
  • cream cheese 2 tbsp
  • avocado 1
  • mustard sauce 1/2 tsp
  • Black pepper powder 1/4 tsp
  • lemon juice 1/2 tsp
  • salt to taste

How to make Tricolor Salad Rollups

  1. Wash and dry cucumber, Carrot and Radish. Peel the carrot and radish ( not the cucumber) with peeler.
  2. Slice thin long strips of carrot, radish and unpeeled cucumber, one each.
  3. Season with cucumber, carrot and radish strips with little salt and pepper and keep it aside.
  4. Finely chop remaining one carrot, cucumber , spring onion and red bell pepper.
  5. In a bowl mix finely chopped carrot,cabbage, spring onion, red bell pepper and all remaining ingredients and mix well.
  6. On the work surface lay down strips of carrot radish and cucumber over lapping each other. With help of small spoon spread the salad mix on to these strips.
  7. Carefully roll them, creaminess of salad mix will hold it together if not you can use toothpick to hold them together. Repeat this with all the remaining strips.
  8. Garnish with dill leaves or parsley or anything of your choice.
  9. Bite size Tricolor salad rollups are ready to serve.

My Tip:

You can add boiled and shredded chicken to the filling mixture to make it non veg salad.
