A delicious recipe of potato with fenugreek leaves and spices.
Par boil potatoes,peel and deep fry till light golden.Keep aside.
Heat oil in a pan,add cumin seeds, heat till crackle.
Add onion and fry till golden brown,further add ginger _garlic paste and cook on medium flame for 2minutes.
Add 1/2cup water and cook on low flame till raw smell of spices vanishes.
Now add tomato puree ,red chilly powder,coriander powder and chopped methi leaves to the gravy.Add 1cup water and cook on medium flame for 5_6 minutes.
When oil separates from the gravy,add salt.stir to combine.
Add curd and mix well.
Add potatoes and cook on low flame for 1_2minutes.
Add 2cups water,and let potatoes boil.
Add salt,simmer the flame ,cover the lid and cook on low flame to 20minutes.
After 20 minutes,when potatoes are tender add garam masala.Mix well and cook on low flame for 1minute.
Serve hot with puris/parathe.
