Ingredients to make Butter Rice Croquette

  • Ingredients for inner part
  • Cooked rice ( preferably leftover or cooked before 3-4 hours ) - 1 cup
  • butter - 1 tablespoon
  • salt to taste
  • Boiled mashed potatoes - 2
  • Grated cheese - 1/2 cup
  • Ingredients for outer part
  • maida or flour -1 cup
  • water -1 / 2 cup
  • salt to taste
  • Crushed cornflakes
  • Ingredients for frying
  • oil - 1/2 cup

How to make Butter Rice Croquette

  1. Take a bowl, add rice, butter, salt, mashed potatoes, 1/2 cup grated cheese and knead to form a soft dough.
  2. Take some portion and make flat round from the mixture. Make a hole in the center, add some grated cheese and shape them like round patties.
  3. Take a bowl, add maida or flour, salt and water, mix well to make a batter, then dip the rice croquettes into the batter, coat with crushed cornflakes, keep them on a plate and put them in the refrigerator for 10 minutes.
  4. Heat oil in a wok, add 4 to 5 croquettes into the oil and keep frying on medium flame until golden brown in colour. Take them out of the wok and place them on kitchen paper.
  5. Serve with tomato sauce.

My Tip:

You can add some boiled vegetables also along with potatoes.
