Quick Vegetable Pulao

Ingredients to make Quick Vegetable Pulao

  • rice 1.5 cup
  • ginger chilli paste 1 tsp
  • Mixed Vegetable 1/2 cup
  • bay leaf 1
  • Green cardamom 1
  • Big cardamom 1
  • cloves 2
  • cumin seeds 1 tsp
  • turmeric 1/4 tsp
  • coriander powder 1 tsp
  • Beaten yogurt 1 tbsp
  • Few mint leaves
  • ghee 1 tbsp or any cooking oil
  • water 3 cups
  • salt to taste

How to make Quick Vegetable Pulao

  1. Wash and soak the rice for 20 mins.
  2. Heat a pan and add ghee, then add cumin seeds, bay leaf, cardamom, big cardamom, cloves, let the fragrance develop then add the ginger-green chilli paste.
  3. Saute it, then add the vegetables along with turmeric powder, coriander powder, beaten yogurt and cook it till the vegetables become soft. Next add salt and few mint leaves which will enhance the flavor of the rice.
  4. Now add in the soaked rice and stir slowly so that rice doesn't break.Transfer it into a rice cooker bowl then pour in water and press the cook mode. Once the rice is cooked and fluffy.
  5. Before serving remove the bay leaves, cardamom, big cardamom and cloves.
  6. Serve it hot with Pickles and Raita.

My Tip:

One can add any vegetables by choice. Serve it with Pickle & Raita. I have cooked it in my electric rice cooker.
