ABOUT Roh di kheer RECIPE

This is a traditional Punjabi cuisine which is generally prepared in Lohri. This is nothing but sugar cane juice and rice puding which is cooked slowly.

Ingredients Serving: 3

  1. 1/2 cup basmati rice
  2. 750 ml sugar cane juice
  3. 2 tsp milk
  4. 1/4 tsp salt / rock salt
  5. 1/2 cup roasted peanuts
  6. 1/4 cup roasted cashew nuts
  7. 4-5 roasted almonds ( you may add more)
  8. 1/2 tsp Cardamom powder

Instructions

  1. First of all strain the sugar cane juice.
  2. Put them on the gas stove and allow it to boil and then add the milk in it.
  3. Milk is added in it to remove the impurities in the juice.
  4. Then add washed rice in it.
  5. Then add the salt.
  6. Cover it with a lid and allow it to cook in low flame.
  7. Stir it occasionally and after 45 minutes remove the lid and add roasted peanuts in it.
  8. Then add the roasted cashew nuts in it.
  9. Mix it well and add the roasted, splitted almonds in it.
  10. Then cook it for sometime and continuously stir it and then add the cardamom powder in it.
  11. Mix it well and after 1 minute switch off the flame and now your Toy the kheer is ready.
  12. Garnish it with some rose petals and dry fruits and serve hot or warm or cold.

Nice recipe..My naani use to make it on various occassions..but 1 question why you add salt to it??
