ABOUT Himachali Siddu / Sidku RECIPE

It's very healthy Himachali traditional dish . It can be stuffed with soaked sabud urad dal also . Today I've stuffed it with poppy seeds and walnuts and other spices. It's served with lots of clarified butter .

Ingredients Serving: 3

  1. 1 cup wheat flour
  2. 1/2 tea spoon active dry yeast
  3. 1/2 cup luke warm water
  4. For stuffing
  5. 1 table spoon poppy seeds paste
  6. 1 small onion chopped
  7. 10 walnuts soaked in water
  8. 1 green chilly
  9. 1 table spoon fresh coriander leaves chopped
  10. 1/4 tea spoon turmeric powder
  11. 1 tea spoon coarsely ground coriander
  12. Salt to taste

Instructions

  1. Soak the dry yeast in lukewarm water for 5 minutes
  2. In a large bowl put wheat flour
  3. Add the yeast water into it and knead
  4. Knead for some time and cover it with a plate and keep aside in a warm place for fermentation
  5. Take all the ingredients for the stuffing
  6. Put everything in a mixer jar except coriander leaves , salt and turmeric powder and make a paste
  7. Remove it in a bowl and mix salt turmeric and coriander leaves and mix well
  8. Now take the fermented dough and knead for some time
  9. Divide the dough into three equal portions , take one portion and flatten it in the palm put some stuffing and close it properly
  10. Put water in a steamer and on the perforated plate keep a butter paper and put the siddu on it
  11. Put a dry cloth on it to prevent it from getting wet and steam it for 15 minutes
  12. Put a knife into the siddu if it comes clean it's ready to serve
  13. It's ready to serve
