Veg Lasagne

Ingredients to make Veg Lasagne

  • For the Lasagne Sheets:
  • 1 cup all purpose flour
  • 2 eggs
  • 2-3 tbsp oil
  • salt 1/8 tsp
  • For the tomato sauce:
  • 4 large sized tomatoes
  • Italian mixed herb 1 tsp
  • 2 tbsp tomato ketchup
  • 1 tbsp fresh cream
  • 1 tbsp olive oil
  • 2 tsp finely chopped garlic
  • salt to taste
  • For the Mixed veg:
  • 1 cup button mushrooms, diced
  • 1 capsicum, diced
  • 1 cup broccoli
  • 2 jalapenos
  • 1 onion, chopped
  • 1 tsp garlic paste

How to make Veg Lasagne

  1. To prepare the lasagne sheets, in a mixing bowl, mix together the flour and salt.
  2. In another small bowl, break the eggs and beat them well. Now pour the beaten eggs, with the help of a fork work it into the flour. Mix together to form a soft dough, then close the bowl with a lid and let it rest for at least 30 minutes.
  3. After 1 hour, divide the dough into 4-5 ping pong sized balls. Use flour to dust a work surface and roll out the balls into thin sheets as much as you can manage. (you can cut them using a pizza cutter or a sharp knife into strips of rectangle or square as you get in the shops.)
  4. Arrange the rolled out sheets onto a big plate, one next to the other till you complete rolling out all the balls and keep the plate covered with a cloth or plate at all times to prevent the sheets from drying out.
  5. Boil plenty of water in a large bowl, then add salt and 1 tbsp oil to it. Add the lasagne sheets to the boiling water one at a time, cook it uncovered and string occasionally for 8-10 mins.
  6. Drain it immediately and transfer it into cold water, then drain once again and keep aside.
  7. To prepare the tomato sauce, blanch 4 large tomatoes, then peel, deseed and chop them finely.
  8. Heat olive oil in pan, add in 2 tsp of chopped garlic. Saute it and add in the mixed herbs.
  9. Next, add the chopped tomatoes, 2 tbsp tomato sauce, salt and cook it for 4-5 minutes. Then add 1 tbsp of fresh cream and 1 tsp of mix herbs. Mix it well together, the sauce is ready.
  10. To prepare the mixed vegges, take a pan and heat oil in it, add the onion and saute for 3-4 mins. Then add the vegetables, salt, chilli flakes, mixed herbs and cook till it's tender.
  11. Grease the baking dish and spread little sauce in the pan.
  12. Place the lasange sheet over it and spread some sauce, then spread 1 portion of the cooked veg and add the mozzarella cheese.
  13. Repeat this process with the remaining sheets, sauce and vegetables. Finish it off with the tomato sauce and cheese as the last layer.
  14. Bake it in a preheated oven at 180 degrees for 20 mins. Cover the dish with a foil, after 20 mins, remove the foil and cook it for another 15 mins.
  15. Serve it warm.

My Tip:

If you feel that the eggs are not enough to form the dough, add 2-3 tsp of oil to make them come together. Do not knead too hard. Roll the dough as thin as possible, the thinner the better. The dough will not break or tear, so it will be easy to manage. After 15 mins I grilled it for 4 mins to get a golden cheese layer.
