I was looking for authentic Punjabi recipe for chole. I have been trying this since my schools days. All the versions have tasted well, but got inspired when I watched it in a TV show , being prepared by a Punjabi, giving minute details.

Punjabi Chole

Ingredients to make Punjabi Chole

  • Kabuli Chena 1 cup
  • onion 1
  • tomato 3
  • ginger and garlic paste 2 tsp
  • Green chilli 4
  • Red chilli powder 1 tsp
  • Amchor powder 1 tsp
  • Chena masala powder 1 tsp
  • cumin seeds (for powder) 1 tsp
  • dry pomegranate seeds 1tsp
  • coriander powder. 1 tsp
  • oil 3 tblsp
  • salt to taste
  • Big brown elachi 3
  • cumin seeds 1 tsp

How to make Punjabi Chole

  1. Soak chena over night. Strain water and pressure cook for 2 whistle adding fresh water and little salt. (chena cooked 50% is ok, as we will be cooking again with masala)
  2. Slice onion finely. Make puree of tomatoes. Slit green chilli.
  3. Dry roast pomogranate seeds, cumin and dania powder till it turns brown. Make powder.
  4. Heat oil in a pan and add elachi and cuminseeds and fry.
  5. Add green chillies and fry. Then add ginger garlic paste and saute till it turns brown.
  6. Now add onion slices and saute till it turns brown.
  7. Add salt and red chilli powder.
  8. Add tomato puree and cook till oil floats on the top.
  9. Add the freshly made powder of cumin, dania and anaar daana powder.
  10. Add cooked chena with water. Add water if needed.
  11. Add aamchor and chole masala powder and mix.
  12. Transer this into a pressure cooker outer, and pressure cook for 3 whistle.
  13. Remove when pressure releases, and serve garnishing with fresh coriander leaves.

My Tip:

Adding the roasted and fresh made powder of pomogranate seeds, cumin and coriander powder gives the dark color to the dish and also aroma. Add all the ingredients without missing any , for getting yummy and authentic punjabi dish. I used the measure of the ingredients according to my desire as the measure was not mentioned in the TV show.
