Tomato Lauki Chutney - A Lip Smacking Delight

Ingredients to make Tomato Lauki Chutney - A Lip Smacking Delight

  • 2 tomatoes
  • Equal amount of bottle gourd (Lauki)
  • 1/4 tsp - roasted and powdered fenugreek seeds
  • salt as per taste
  • 2 fat pinches of sugar
  • 2 pinches of hing (asafoetida)
  • mustard seeds as per taste
  • 1 tsp oil
  • Fresh coriander leaves (Optional)
  • Green chilli/ red chilli as per taste

How to make Tomato Lauki Chutney - A Lip Smacking Delight

  1. Cut lauki into small pieces. Keep aside in hot water for 5-8 minutes.
  2. Add whole tomatoes to the hot water along with lauki.
  3. Remove both and let them cool for a couple of minutes.
  4. Add lauki and tomatoes to the food processor along with green chilli or red chilli. Run the grinder until you get a pulpy mixture.
  5. Keep this paste aside.
  6. Heat oil in a pan.
  7. Add hing and mustard seeds to the hot oil. Let them splutter.
  8. Throw in the tomato-lauki mixture and saute it for 3-4 minutes.
  9. Add salt and sugar. Mix well
  10. Before turning off the flame in about another 2-3 minutes, add roasted and powdered fenugreek seeds.
  11. Mix everything well. Turn off the flame.
  12. Garnish with fresh coriander leaves.
  13. Enjoy with rice, roti, idlis, dosas, or parathas.

My Tip:

Putting lauki and tomatoes in the hot water will make them soft and better to grind easily.
