It is scented with kapoor (camphor) we used to have it during festivals, when we were kids. Especially, prepared by my grandfather. He is the inspiration that let me put forward this recipe. The same recipe can be used for white rice pudding also. Its actually a dessert but we can have it at breakfast or brunch.

Ingredients to make Chahao Kheer (Black rice pudding)

  • 3/4 cup black rice (Never wash/rinse so use clean rice)
  • 1/2 cup granulated sugar
  • 2 litres of milk
  • 6-7 green cardamom pods
  • 2 tsps roasted shredded coconut
  • 2 tsps blanched skin off roasted and shredded almonds
  • 1 tsp raisins
  • 2 bay leaves
  • 1/4 tsp of edible camphor

How to make Chahao Kheer (Black rice pudding)

  1. Boil the milk in a pressure cooker or any thick bottomed vessel. Do not cover it. Keep on stirring occasionally. This may take 10 minutes.
  2. Put the bay leaves and cardamom, boil it for 1/2 minutes.
  3. Now add the rice
  4. Close the lid. When it's about to whistle, lower the flame and simmer it for 10 minutes.
  5. After the pressure is gone open the cover and place the cooker on a medium flame.
  6. Add the sugar, half amount of all the dry fruits and stir it once or twice.
  7. Check the rice consistency. It should have creamy & pudding consistency (not running) , rice and milk should not separate. Instead rice should be infused with milk.
  8. Now the kheer is ready. Serve it in a bowl and garnish with coconuts & dry fruits. You can decorate with 2 or 3 cherry on top also.

My Tip:

Serve with Banana cream, made of fully ripe banana, milk, cinnamon, caramel, limoncello and full fat milk. Just blend them together until sauce consistency.
