Instant vegetable rice

Ingredients to make Instant vegetable rice

  • Basmati rice 1 cup
  • Hot water 2 cups
  • bay leaves 2
  • clove 4
  • Garlic cloves 5
  • green chillies 4
  • cardamom 4
  • nutmeg 1
  • onions 2 thinly sliced
  • onion 1 thinly sliced, for garnishing.
  • carrot 1 big, finely chopped
  • Soya granules 1/4 cup
  • salt to taste
  • curd 1 tsp
  • Garam masala 1/2 tsp
  • coriander leaves for garnishing.

How to make Instant vegetable rice

  1. Wash and soak basmati rice in water for 30 minutes.
  2. Wash and soak soya granules in warm water for 20 minutes with little salt.
  3. Take a cooker. Add ghee and oil. Fry bay leaves, cardamom, nutmeg, clove. Then add onions, green chillies and garlic and fry till golden brown.
  4. Now squeeze the soya granules to remove excess water and add it to the cooker. Add chopped carrots. Fry well.
  5. Now add garam masala and fry.
  6. Add drained rice and mix well. Then add curd.
  7. Add hot water just 1 inch above the level of rice.
  8. Close the lid and pressure cook for 3 whistles on a high flame.
  9. Once the cooker is cooled. Transfer the rice to serving bowl. Garnish with coriander leaves and ghee roasted onions.

My Tip:

Please make sure that the water should be very hot before adding to the cooker. The level of water should not be more that 1 inch that of rice level.
