Vegetable Vermicelli

Ingredients to make Vegetable Vermicelli

  • Vermicelli 250-300 gms
  • Finely sliced vegetables:
  • 1 onion
  • 1/2 capsicum
  • 1/2 carrot
  • salt to taste
  • haldi a pinch
  • 2-3 green chillies
  • oil 1/2 tsp
  • Grated ginger less than an inch (Optional)
  • 1/2 tsp of lemon juice (Optional)
  • For tempering:
  • Rai 1/2 tsp
  • curry leaves a few
  • green chillies 1 or 2

How to make Vegetable Vermicelli

  1. Boil vermicelli with a 1 tbsp of oil for 5 minutes.
  2. Drain the water and run it under cold water for a minute. Keep it aside for 5 minutes so that the excess water is drained out.
  3. Take oil in a wok, add in rai, curry leaves and whole green chillies. Saute it for a minute.
  4. Add sliced vegetables, cook till they are soft.
  5. Add in the grated ginger.
  6. Add vermicelli, salt, haldi and lemon juice. Mix well and simmer to a low flame for about 7-10 minutes.

My Tip:

Do not boil vermicelli for long as it is made of wheat and will turn hard.
