Inspired from a classic Maharashtrian dessert Amarkhand

Amarkhand (Mango cheese cake)

Ingredients to make Amarkhand (Mango cheese cake)

  • fresh mango pulp- 120gms
  • hung yogurt- 200gms
  • icing sugar (optional)
  • cardamom powder - 1/2 tsp
  • digestive biscuit or rusk 80gms
  • melted butter- 30gms

How to make Amarkhand (Mango cheese cake)

  1. In a cheese cloth hand the yogurt overnight.
  2. Place the hung yogurt in a bowl along with 50 to 60 gms of mango pulp, cardamom powder and icing sugar, whisk the mixture till soft and fluffy.
  3. For the Crust: Place the digestive biscuit in a blender and make a coarse powder, add the melted butter and mix.
  4. Spoon in the cheese cake base, mango yogurt mixture and some fresh mango puree in layers in small jars garnish with angoori jamunas as garnish
  5. Best served chilled

Can anyone give an idea as to how much YOGHURT will be required to get 120 gms. of hung yoghurt ?
