A sweet thickened milk cream which can be used as a topping over other sweet dishes

Ingredients to make Rabri

  • Milk - 1 litre
  • sugar -3 tbsp( Add more or less acc. to taste)
  • 1 tbsp pistachios
  • 1/2 tsp cardamom crushed

How to make Rabri

  1. Bring the milk to a boil in a saucepan.Lower the heat once it is boiling
  2. Once the layer of foam develops, with a spatula move it to the rim of the pan.
  3. Repeat this with the new layer of foam.
  4. After 20 mins of boiling milk, add the sugar and cardamom and boil till it is reduced to 3/4 of its volume
  5. Turn off the heat and scrap the cream off the rim of the pan.
  6. Garnish with pistachios and use.
