Ingredients to make Quiche Cups

  • Bread slices - 4
  • eggs - 3
  • Milk - 3 tbsp
  • mushrooms - 3 big ones chopped
  • Boiled corn - 2 tbsp
  • coriander leaves a handful
  • green chilly - 1 sliced
  • Cheese- 4 tsp grated
  • Salt and pepper powder as per taste
  • oil - 1 tsp

How to make Quiche Cups

  1. Preheat oven to 180 C.
  2. Cut rounds of the bread slices as per the size of the muffin tin. Flatten lightly with a rolling pin.
  3. Grease 4 cups of the muffin tin and press the bread slice into each, to form a base. Bake in the oven for 5 mins, or till they become like a toast but not very hard.
  4. While the bread is in the oven, slice the mushrooms. Heat oil in a pan, add mushrooms, corn and green chilly. Saute lightly. Put off stove and add chopped coriander. Let it cool.
  5. Take out the muffin tin and put a tsp of cheese in each cup.
  6. Beat the eggs and mix in the milk, salt and pepper.
  7. Add this mixture to the cooled mushrooms and mix well.
  8. Pour into the bread cups and bake for 15 mins or till eggs are set.

My Tip:

Bread has to be fresh or else it will break while putting in the muffin tin.
