Simple Egg Curry

Ingredients to make Simple Egg Curry

  • 1 medium onion
  • 3 small sized ripe tomatoes
  • 1 tsp ginger-garlic paste
  • 3 eggs
  • 1/2 cup water
  • 1/2 tsp chili powder
  • 1 tsp coriander powder
  • 1/4 tsp turmeric powder
  • 1/2 tsp garam masala
  • 3 tbsp oil
  • 1 spring of curry leaves
  • salt as per taste

How to make Simple Egg Curry

  1. Grind onion and tomatoes into a fine paste. Heat oil in a pan, add in the paste and saute well till the raw smell goes off. Next add ginger garlic paste and again stir well.
  2. Once the mixture leaves oil, add in curry leaves and all the spices. Mix all the spices with the onion tomato mixture.
  3. Now add half cup water and close the pan with a lid and let the mixture come to a boil. By that time break 3 eggs in a bowl. Once the curry comes to a boil add in the eggs one by one. Close the lid.
  4. The eggs will get cooked in the curry. All the spices will enter the eggs. After 5-6 minutes, check the eggs if they are cooked, switch off the flame.
  5. Serve hot with steamed rice or any bread of your choice.
