Ingredients to make Quick Besan Burfi

  • 1 cup chickpea (besan) flour
  • 4 tablespoons ghee (clarified butter)
  • 3/4 cup condensed milk
  • 2 tablespoons sugar (powdered)
  • 3-4 green cardamom seeds crushed into fine powder
  • 1/4 cup slivered almonds

How to make Quick Besan Burfi

  1. Grease a medium size steel plate or take a square cake pan. Line it with parchment paper. Ensure that the parchment paper extends over the sides.
  2. Take chickpea flour and ghee in a thick bottom steel wok. Cook on low heat stirring continuously.
  3. First, the mixture will be a bit hard to stir. Soon it will begin to change colour and become thin.
  4. Cook till besan turns slightly dark in colour and a lovely aroma emanates. Turn off the heat.
  5. Add powdered sugar. After 10 minutes, add condensed milk. Stir very well so that you get a lump free mixture.
  6. Cook on low heat. Stir continuously to stop the mixture from sticking to the bottom and burning.
  7. Cook till mixture thickens and leaves the sides of the wok. It should come in the center as one ball. Turn off the heat.
  8. Add cardamom powder. Mix well. empty the mixture into the prepared pan or plate.
  9. Spread evenly with a greased ladle. Sprinkle slivered almonds and press them into the mixture. Keep it to cool.
  10. When cold, remove the burfi and cut into squares. Store in an airtight container.

My Tip:

If you prefer your burfi less sweet, avoid powdered sugar. Using parchment paper ensures that the burfi comes out clean.
