Sweet biryani

Ingredients to make Sweet biryani

  • Basmati rice 1 cup
  • sugar 1 1/2 cup
  • Desi ghee 4 tbsp
  • Mix cutting Dry fruits 1 cup
  • Green cardamom powder 1 tsp
  • bay leaves 2
  • Black cardamom 1
  • cloves 2
  • Food color yellow 1 tsp
  • saffron 1 pinch
  • Green 1 pinch
  • rose essence 4 drops
  • Kewra water/rose water 1 tsp
  • Milk 2 tsp

How to make Sweet biryani

  1. Soak rice for 1 hour
  2. Heat 3 cups of water in a pot.
  3. When water boils, add soaked rice, yellow food color and 1 tbsp desi ghee.
  4. Let it cook till 80%.
  5. Drain excess water and spread rice in a plate.
  6. Heat 1 tbsp ghee in a heavy bottom pot/pan.
  7. Add black cardamom, green cardamom powder, bay leaves and cloves.
  8. Switch off flame, spread 2 tbsp sugar, 2 tbsp cooked rice, 1 tbsp dryfruits.
  9. Repeat this process till rice, sugar and dry fruits ends.
  10. Add Kewra water, rose essence, remaining 2 tbsp ghee.
  11. Dissolve food colors in 1 tsp milk seperately.
  12. Add these food colors on top of rice, don't mix it.
  13. Cover this pot tightly.
  14. Heat a tawa on gas. Keep rice pot on tawa on sim flame for 40 mins.
  15. Open and mix lightly. Serve hot or cold.
