Mawa Kaju Sandwich

Ingredients to make Mawa Kaju Sandwich

  • For the kaju barfi layer:
  • 125 gm cashew powder
  • A pinch of saffron
  • Few drops of saffron colour
  • 2-3 drops of rose essence
  • 50 gm (1/4 cup) water
  • 75 gm sugar
  • ghee for greasing
  • For the filling:
  • 2 tbsp powdered sugar
  • 3 tbsp mawa
  • 3 tbsp desiccated coconut
  • 1/4 tsp rose essence
  • A drop of red colour
  • Chocolate chips for garnishing

How to make Mawa Kaju Sandwich

  1. Heat a pan, add water and sugar, then let it boil till it forms a two thread consistency syrup. Turn off the flame and add in the soaked saffron water and saffron colour.
  2. Now add the cashew powder and mix vigorously till you get the dough like consistency.
  3. Grease your hands and butter paper for easier rolling. Place the dough on a sheet of butter paper and roll out to the desired thickness.
  4. Cut the rolled out dough into small circles with the help of a cookie cutter. Then keep it aside.
  5. For the pink layer or filling, mix the mawa, sugar, coconut, rose essence and colour to form a smooth dough. Make a ball shape, then flatten it and cut it with the help of a cookie cutter. ( it should be the same size of kaju barfis)
  6. To prepare the dish, place one kaju barfi circle on a plate and put the coconut mawa circle on it. Top it with the second cashew barfi circle on it.
  7. Garnish with chocolate chips and serve.

My Tip:

We can use rose sharbat instead of colour and essence.
