Pad Thai Noodles with Cabbage Crunch

Ingredients to make Pad Thai Noodles with Cabbage Crunch

  • 1/2 cabbage- 300 gms, sliced into strips
  • 1 onion, sliced
  • 1/2 packet of Pad Thai Noodles
  • 1 tsp soya sauce
  • 2 tsp vinegar
  • 1 tsp chilli sauce
  • 2 cloves of chopped garlic
  • 1 tsp chilli powder
  • 1 piece star anise
  • 1/4 tsp mustard seeds
  • salt to taste
  • 1/4 tsp white pepper
  • 1 tbsp cooking oil (sesame oil is preferred)
  • water as required

How to make Pad Thai Noodles with Cabbage Crunch

  1. Soak the pad thai noodles in warm water. (Ideally, boil a litre of water with salt and a few drops of oil. Immerse these noodles in boiling water and keep the heat on till they collapse, for about a minute. Then turn off the heat and let the noodles cook.)
  2. Mix the vinegar, chilli sauce and soya sauce. Keep it aside.
  3. Heat oil in a pan. Temper the mustard seeds in it, then add in the chopped garlic and star anise.
  4. Once the garlic browns, then add in the chilli powder. As the color of the oil changes, add in the sliced cabbage and onions. Saute for 2-5 minutes.
  5. Rinse the soaking noodles and add them to the pan. Then add the sauce mixture, salt and pepper to it.
  6. Mix well and saute for 3-4 minutes.
  7. Serve it warm.

My Tip:

Add mango powder and pepper to make it tangier.
