ABOUT Schezwan Chutney RECIPE

Schezwan chutney is a popular accompaniment with various Indian and Chinese snacks. Many times it comes handy when you want to make a quick stir fry, fried rice or any fried chicken/veg recipe. This is how I cook this delicacy.

Ingredients Serving: 10

  1. 35-40 garlic cloves, finely chopped
  2. 4 inch ginger, finely chopped
  3. 1 small sized onion, finely chopped
  4. 10-12 kashmiri red chillies
  5. 1 teaspoon pepper powder
  6. 1/2 teaspoon salt
  7. 1/2 teaspoon sugar
  8. 1/2 tablespoon vinegar
  9. 1 tablespoon red chilli sauce
  10. 1 tablespoon dark soya sauce
  11. 6 tbsp oil

Instructions

  1. Soak the red chillies in warm water for 2 hours, then grind them to form a fine paste.
  2. In a pan heat oil, then add in the chopped ginger and garlic. Cook until the raw flavour fades away. Do not let it change colour or burn.
  3. Now add in the onion and saute till they turn translucent. Then add in the chilli paste, salt, sugar, pepper powder and red chilli sauce. Cook well till the oil separates itself.
  4. Finally add in the dark soya sauce and vinegar. Adjust the seasonings and cook for 1 minute till it's done.
