Zoodles in Schezwan Sauce

Ingredients to make Zoodles in Schezwan Sauce

  • Zucchini 1 medium
  • garlic 6 cloves
  • onion 1 small
  • Red bell pepper 1/4
  • Green bell pepper 1/4
  • Schezwan sauce 1 teaspoon
  • oil 1 teaspoon
  • coriander for garnish

How to make Zoodles in Schezwan Sauce

  1. Using a julienne peeler or spiralizer, make noodles from the yellow zucchini. Slice any leftover bits of zucchini after passing it through spiralizer. Finely chop the garlic. Thinly slice the onions and bell pepper.
  2. In a microwave safe bowl, place the zucchini noodles. Add a teaspoon of water and microwave for 1 minute.
  3. Heat oil in a pan. Add the finely chopped garlic and onion. Stir on high heat for 1 minute.
  4. Add bell peppers and stir on high flame for 30 seconds.
  5. Add the microwaved zoodles, schezwan sauce and toss until well coated. Don't cook the zoodles for more than a few seconds, so that they retain their crunch.
  6. Garnish with fresh coriander.

My Tip:

Use store bought schezwan sauce or prepare at home and keep refrigerated for making noodles, rice or stir fries.
