Ingredients to make Thai delight

  • White rice - 1 cup (boiled)
  • sugar - 2/3 tbsp
  • coconut milk - 1 cup
  • Milk - 1/2 cup
  • Gelatin - 1 Tbsp
  • Fresh mango purée (You can use canned also)
  • sesame seeds - for garnish (Black & White)
  • Cubed mango pieces

How to make Thai delight

  1. Dissolve gelatin in some water, heat in the microwave for 10 seconds. Keep aside.
  2. Heat milk and coconut milk together, add in sugar, boiled rice. Bring it to a boil, add in the dissolved gelatin, pour in silicon moulds.
  3. Refrigerate for 2 to 3 hours.
  4. Unmould on a serving plate, top with mango puree & cubed mango pieces. Sprinkle black & white sesame seeds for a more dramatic effect.
