Blueberry Ginger Bread

Ingredients to make Blueberry Ginger Bread

  • 2 cups - whole wheat flour
  • 1 cup - blueberries
  • 1 teaspoon - ginger
  • 1 teaspoon - cinammon
  • 1 teaspoon - vanilla extract (optional)
  • 1 cup - oil
  • 1 teaspoon - baking soda
  • 1 teaspoon - baking powder
  • 1 - egg
  • 1 cup - buttermilk
  • 1/2 teaspoon - salt

How to make Blueberry Ginger Bread

  1. Preheat the oven to 150°C.
  2. Mix the sugar, oil and salt very well in a bowl. Beat in an egg.
  3. In a bowl add the wheat flour, cinnamon, baking soda, baking powder, vanilla extract and ginger.
  4. Mix the flour mixture (dry mixture) with the wet mixture alternatively add in buttermilk. Beat it so no lumps are formed.
  5. Add blueberries and mix well.
  6. Pour the mixture into a greased baking dish (loaf pan) and bake in the oven for 30-40 minutes.
  7. Cut into pieces after cooling outside for 15 minutes
  8. Tastes best with coffee
