MALAYSIAN NASI PLATTER

Ingredients to make MALAYSIAN NASI PLATTER

  • chilli oil
  • 2 eggs
  • 1 tbps dark soy sauce
  • 2 tbps chopped kafir lime leaves
  • 2 tbps lemon grass chopped
  • 1/2 tbsp galangal or ginger chopped
  • 1/4 cup shrimp paste
  • 1/2 cup poached shrimps
  • 2 cups cooked rice
  • penut butter 1/4 cup
  • dark soy 2 tbsps
  • 1/2 tsp chilli powder
  • 2 breasts chicken strips
  • salt and pepper
  • 1 tbps of ginger chopped
  • 1/4 cup of chopped onions

How to make MALAYSIAN NASI PLATTER

  1. marinate the chicken in salt pepper and a mix of peanut butter , soy sauce and chilly powder
  2. heat a wok, with chilly oil, garlic, galangal, kaffir lime leaves and lemon grass, cook for 30 seconds, now add the shrimp paste , salt and pepper cook for a minuit
  3. while thats cooking , heat a pan with oil, cook chicken each side 2 mins
  4. in the wok, add rice and soy sauce , stir in the prawns , remove from heat
  5. top the rice with fried eggs and chicken satay
My Tip: check for salt since soy sauce is salty
