Cilantro Lime Rice with Black Beans

Ingredients to make Cilantro Lime Rice with Black Beans

  • 2 cups cooked long grain rice
  • 1 Large onion chopped
  • 2 green chilies
  • 1 red bell pepper (or green) chopped
  • 1 can black beans washed and drained
  • 1/2 cup chopped cilantro
  • Juice of 1 lime
  • 1-1/4 tsp garlic powder
  • 1 or 2 chipotle adobo chili chopped finely
  • 3 tbsp oil
  • salt to taste
  • Water as per required quantity (1 cup rice and 2 cup water)
  • Handful of Grated cheese

How to make Cilantro Lime Rice with Black Beans

  1. Heat oil in a skillet. Add green chilies and chipotle chili.
  2. Add onions and saute till the onions sweat and turn translucent.
  3. Add peppers and black beans. Stir fry for a minute.
  4. Add garlic powder, lime juice, salt to taste, and cilantro reserving some for garnish.
  5. Add rice and stir well to mix all. Cook for few minutes till steaming (approximately 5 minutes) on low heat.
  6. Garnish with cheese and cilantro before serving.
