Ingredients to make Hyderabadi Shami Kabab Sticks...

  • Mutton or chicken boneless 500gm.
  • Bengal gram or chana dal 1/2 a cup
  • salt to taste
  • Garam masala a tbsp
  • ginger garlic paste a tbsp
  • chilli powder a tbsp
  • Cubeb ( tailed pepper) about 10
  • coriander and mint leaves a fistful.
  • Green chillies 2
  • onion 1 large finely chopped.
  • oil 1 to 2 tbsp to add in the mutton while cooking + additional oil as needed for shallow frying.

How to make Hyderabadi Shami Kabab Sticks...

  1. Soak the dal for an hour.
  2. Pressure cook the mutton with all the ingredients along with the dal just for about 6 to 7 whistles, using minimum of water.
  3. I usually cook it on low flame in a heavy bottomed pan for 30 to 40 mins which helps in giving a unique flavour to the kababs
  4. Grind this mix, shape them into kababs and shallow fry.
  5. Serve hot with rice.

My Tip:

No need of egg here. You will be able to shape them and even fry them if you follow the recipe as it is.
