Ingredients to make Mix Vegetable Pakora

  • Eggplant 2
  • carrot 1
  • onions 2
  • Bell pepper 1
  • potato 2
  • Kasoori methi 1 Teaspoons
  • oil for deep-fry
  • salt to taste.
  • chickpea flour 1 Cup.
  • Ajwain (carom seeds) 1 tsp
  • fennel seeds 1 tsp
  • coriander seeds 1 tsp.
  • spinach 1 Bunch.
  • methi leaves 1 Bunch.
  • Spring onions 1/2 cup
  • Chopped coriander 1 bunch
  • chilly Powder 1tsp
  • paneer 1/4 Cup.
  • baking soda 1/4 tsp

How to make Mix Vegetable Pakora

  1. Cut all the vegetables in to Julienne, and keep aside.
  2. Take some coriander seeds, fennel seeds; make a coarse powder in mortar pestle.
  3. Take a bowl add powder of coriander and fennel seeds, add ajwain, chickpea flour, salt, oil, kasoori methi and mix them till sandy texture ,
  4. add potato juliennes, bell pepper, carrot, eggplant, spinach, methi leaves(optional), spring onions, paneer, onions, chopped coriander, chilly powder, baking soda and rest for 5 minutes, and sprinkle some water and make a dough.
  5. Heat oil in a pan and deep-fry the pakora, Serve this hot with chutney.
