ABOUT Singhal RECIPE

Singhal is a traditional festive recipe from Uttarakhand. Few days back, I visited my friend’s place, who belongs to Uttarakhand. I have learned this recipe from her mother in law.

Ingredients Serving: 4

  1. 1 cup Semolina
  2. ½ Cup thick Yogurt
  3. ½ Ripe Banana mashed
  4. ½ Cup Sugar
  5. ½ tsp Green Cardamom Powder
  6. Milk, as required
  7. Oil for deep frying

Instructions

  1. Take a wide bowl. Add semolina, thick yogurt, mashed banana, sugar and green cardamom powder. Mix well.
  2. Add enough milk and make a smooth batter.
  3. Cover and keep it aside for 3-4 hours.
  4. Heat oil in a kadhai.
  5. Take a clean plastic bag and make a cut in the end. Fill the bag with semolina batter and press the bag so that batter reaches the point, where the bag has a cut.
  6. Drop the batter in the oil in a spiral shape like jalebi.
  7. Fry it until golden brown. Drain on an absorbent paper and repeat the process.
  8. Serve Singhal with rabdi as a dessert or with tea as a snack.
