Ingredients to make Pita bread with filling!

  • 4 - pita bread
  • 2 tbsp - hummus
  • 1/2 cup - diced tomatoes
  • 1/2 cup - diced cucumber
  • 1/2 cup - blanched brocoli
  • 2 tbsp - lemon juice
  • 1 tsp - olive oil
  • 1/2 cup - yogurt
  • 1/2 cup - greated cheese
  • 1 clove garlic - grated
  • 1 tsp - dried mint
  • salt and pepper to taste

How to make Pita bread with filling!

  1. Take the pita bread cut into half in the middle leaving space at the middle.
  2. In a small bowl combine diced tomato with half of the cucumber, broccoli, olive oil, half lemon juice, salt & pepper to taste. Spread it in the split pita bread along with the hummus.
  3. For the cucumber yoghurt sauce: combine remaining 1/4 cup cucumber, yogurt, grated cheese, dried mint, garlic, remaining lemon juice in a small bowl. Season with salt, pepper to taste.
  4. Bake at 200°C for 2 to 3 minutes. Serve or pack for a quick meal.
