Cajun Spiced Panko Chicken

Ingredients to make Cajun Spiced Panko Chicken

  • 4 boneless chicken breasts
  • 1/2 cup Panko breadcrumbs
  • 2 tsp Cajun seasoning
  • 1 tsp red chili powder/paprika
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning or oregano
  • 1/3 cup garlic herbed Parmesan cheese
  • 1/2 cup mayonnaise
  • salt if required
  • Enough oil for deep frying

How to make Cajun Spiced Panko Chicken

  1. Trim any fat off the chicken. Wash and drain excess water. Give the chicken breasts grooves if desired.
  2. Lightly toast the breadcrumbs on a heated pan and keep aside in a plate.
  3. Combine all the remaining ingredients except oil and whisk well. Adjust any seasoning according to taste.
  4. Rub the marinade on the chicken well. Transfer the chicken on the plate containing the breadcrumbs. Pat the breadcrumbs well onto the chicken.
  5. Heat oil in a wide thick bottomed deep pan. Fry the chicken both sides (without overcrowding) till golden brown in color on medium heat.
