Quiche In a Brick Pot

Ingredients to make Quiche In a Brick Pot

  • For crust -2 eggs
  • 1tbsp butter
  • 1tbsp extra virgin olive oil
  • 2 cups all purpose flour
  • Pinch of salt
  • For filling -garlic chopped 1tbsp
  • onions chopped 1cup
  • spinach chopped 3cups
  • eggs 2
  • heavy cream 1cup
  • Mozarella cheese diced into small cubes 1/2cup
  • Black pepper 1/2 tsp
  • salt to taste

How to make Quiche In a Brick Pot

  1. Add butter to flour, add eggs and salt and knead a smooth dough.
  2. Keep this dough covered in the fridge for 10 minutes.
  3. Heat the oil in a skillet and saute onions ,garlic till they become little transparent.
  4. Add spinach, salt and cook for 5 minutes.
  5. While your spinach is getting cooked roll the dough to make large chapati.
  6. Now set the rolled chapati on the brick pot like I did in the picture
  7. Make impressions on the edges of the pot with the help of a fork.
  8. Grease the crust with olive oil.
  9. Add cooked spinach , onions and garlic.
  10. For the custard filling we need to whisk the the eggs with cream and salt.
  11. Pour the beaten cream mixture over spinach filling.
  12. Sprinkle cheese and pepper on top.
  13. Bake quiche at 180 degrees C for 20 minutes.
  14. Cool for at least 20 minutes.
  15. Serve and enjoy

My Tip:

You may bake for 5 minutes more if a crispy crust is needed.
