ABOUT Stuffed Cheesy Egg in Eggplant with Home Made Marinara RECIPE

Grilled Stuffed Eggplant with homemade marinara sauce and marinara grilled tomatoes. In stuffing, I used egg, corn, capsicum, onion, parsley, basil and oregano. Roll on eggplant with mozzarella cheese sheet and egg stuffings. Serve with marinara sauce and Shital's grill tangy marinara tomatoes.

Ingredients Serving: 3

  1. Eggplant one - big and long
  2. 2 tbsp olive oil
  3. 1/2 cup pasta sauce
  4. 1/2 bowl Mozzarella cheese
  5. 3 sheets of mozzarella cheese
  6. 1/4 bowl Parmesan cheese
  7. For filling-
  8. 1 big egg
  9. 2 tbs Pasta sauce
  10. 2-3 tbsp boiled corn
  11. 2 tbsp capsicum
  12. 2 clove garlic
  13. One chopped oinon
  14. 1 tbsp basil fresh and dry each
  15. 1/2 tbs Parsley
  16. 1/2 tbsp Oregano
  17. 1/2 tbsp chilli flakes
  18. salt as per taste
  19. For marinara sauce
  20. 1 tbsp Basil fresh
  21. 2 garlic cloves chopped
  22. 1/2 cup onion
  23. 1 tbs oregano
  24. 1 cup Tomato puree
  25. 1 cup tomato paste
  26. 1/4 tsp black pepper
  27. 1/4 tbsp Olive oil
  28. 1/2 cup sprite/Red wine (i used sprite)

Instructions

  1. Cut eggplant in a longitudinal shape and sprinkle salt on it. Keep aside for a few minutes.
  2. Heat a nonstick tawa and cook eggplant with till crisp . Once done, leave to cool
  3. Preheat oven at 180 degrees C
  4. For filling - In a skillet, heat olive oil and add corn, capsicums, pasta sauce, garlic, onion basil fresh and dry both, parsley, oregano, chilli flakes , and salt. Cook for sometime until veggies are tender. Then add one egg and stir constantly to make scrambled egg.
  5. Now make marinara sauce, in a non stick pan heat olive oil, add garlic, onion. Cook till onions turn translucent. add oregano, basil, tomato puree, canned tomatoes, black pepper, paprika, salt. Cook 5-6 mins and add sprite or red wine as per your wish. Cook until you get a thick sauce
  6. For a tangy marinara tomatoes-
  7. Follow marinara sauce step as usual without using tomato puree and canned tomatoes. Replace of above tomatoes puree and canned tomatoes. Use fresh tomatoes and cook for 5 minutes on high heat. Turn off the heat and add honey. Shift in a baking dish and grill for 10-15 minutes at 180 degree C .
  8. Now all is ready. Assemble all together. Spread eggplant, add marinara sauce, cheese slice, filling as much you can stuff and roll it carefully. Make all three like this.
  9. Take a baking dish, spread pasta sauce, keep eggplant roll on this, mozzarella cheese and parmesan cheese repeatedly as much you like. Grill it on the top rack for 12-15 mins.
  10. Garnish with fresh Tomatoes and Parsley
