Oats Cranberry Cookies

Ingredients to make Oats Cranberry Cookies

  • 100 grams Butter soft
  • 30 grams White Sugar
  • 100 grams Brown Sugar
  • 100 grams Flour
  • ½ teaspoon Baking Soda
  • 1 Egg
  • ½ teaspoon Vanilla Essence
  • 120 grams Rolled oats
  • 50 grams Dry Cranberries

How to make Oats Cranberry Cookies

  1. Cream the butter and sugars till light and thick, add the vanilla essence, mix, add the egg and whisk for a minute or so.
  2. Sift the flour and the baking soda, in a separate bowl, mix the cranberries and rolled oats.
  3. Use a wooden spoon to blend the wet and dry ingredients to make a stick, thick dough.
  4. Grease or line a cookie sheet, drop heaped tablespoons of dough, give an inch and a half of space for cookies to spread.
  5. Flatten gently and bake at 180 degree Celsius for 8-10 minutes till cookies are firm and light brown.

My Tip:

You can also add a few cashew nuts to compliment the cranberries.
