Ingredients to make Vanilla Sponge Cake Baked in Pressure Cooker

  • 1 cup all purpose flour
  • 1 and 1/4 tsp baking powder
  • 1/4 cup melted butter
  • 1 cup powdered sugar
  • 1/4 cup water
  • 1/2 cup curd
  • 1 tsp vanilla essence
  • 1/4 tsp salt
  • Chopped nuts or tutti frutti

How to make Vanilla Sponge Cake Baked in Pressure Cooker

  1. Grease the bowl and dust with maida.
  2. Sift the flour and baking powder and transfer into a mixing bowl.
  3. Add the salt, sugar, butter, water and vanilla. Beat the mixture using a wooden spoon or a beater till well blended.
  4. . Add the dahi to the cake batter and beat until smooth. The batter looks almost glossy when done. Transfer the batter into the tin.
  5. Heat the pressure cooker (empty), covered but without the pressure for 3-4 minutes on high heat, then place the cake tin in it. Cover again with the lid( gasket and whistle removed).cook on medium flame for 5 minutes, then lower the flame and let it cook till done (about 30 to 45 minutes) You can add chopped nuts or Tutti Frutti also
  6. Slice when cold
