Cake Coffee Caramel Cream

Ingredients to make Cake Coffee Caramel Cream

  • Nescafe instant coffee 2 tsp
  • water 1 and 1/2 cups
  • sugar 3/4 cup
  • Gelatin 2 and 1/2 tsp (mix in 4 tbsp water)
  • Whipped cream 2 cups (consistency of the cream should be thick but pouring)
  • Chocolate essence 1 tsp
  • Cold coffee mix powder 1 tbsp
  • Eggless vanilla fruit cake 10 slices
  • Chocolate chips or nuts as needed for decoration

How to make Cake Coffee Caramel Cream

  1. In a pan boil water and add coffee to it. Boil it for 1-2 min. Switch off the gas. black coffee is ready. Keep aside.
  2. Take a heavy bottomed pan. Add sugar in it and melt it on slow fire by stirring continuously. After few mins, sugar will turn golden brown. Switch off the flame.
  3. Now immediately add hot black coffee into the caramel sugar. By stirring continuously keep it on medium slow flame for 5 mins or so till caramel crystals dissolves properly. Switch off the flame. Cool it completely.
  4. Take 4 tbsp normal water in a small bowl. Sprinkle gelatin over it do not mix. Keep it for 5 mins it will puff up. Now heat it on slow flame till gelatin is fully dissolved. Do not boil.
  5. Immediately add gelatin solution into the coffee caramel syrup by stirring continuously.
  6. Now add essence and whipped cream. Mix well using whisker so that no lumps remain.
  7. Keep it in the freezer for 1 hour or so till it is semi thick.
  8. Now crumble the cake pieces and arrange at the bottom of the serving glass bowl. Pour semi thick cream mixture over the cake and cover it with a plate and keep in the freezer for 1hr after that keep it in a fridge for a couple of hrs till completely set.
  9. Before serving keep it in the freezer for 15 mins decorate with chocolate chips and nuts.
