Ingredients to make Earl Grey And Orange Tea Cupcakes

  • all purpose flour 1 1/4 cup
  • Baking powder 1/2 teaspoon
  • baking soda 1/4 teaspoon
  • sugar 3/4 cup
  • butter 1/2 cup
  • Earl grey tea 3 bags
  • Orange essence 1 teaspoon
  • Freshly grated orange rind 2 tablespoon
  • Milk at room temperature 1/2 cup
  • vinegar 1 tablespoon
  • water 1/2 cup

How to make Earl Grey And Orange Tea Cupcakes

  1. Preheat oven at 180 degree Celsius for 10 minutes
  2. Line cupcake tin with cupcake liners
  3. Combine vinegar with milk, let this mixture stand undisturbed for 5-10 minutes, milk will start to curdle.This can be used as a buttermilk substitute. Keep aside
  4. Boil 1 tablespoon orange rind in the water and reduce the water to half
  5. Add 2 tea bags in the orange rind flavoured water and let it brew for 15 minutes.
  6. Discard tea bags and strain the water
  7. In a bowl cream together butter and sugar
  8. In a separate bowl sift flour, baking soda and baking powder
  9. Fold this sifted flour into creamed butter and sugar gently
  10. Add brewed tea and orange rind concentrate, orange essence, buttermilk and mix well, do not overbeat
  11. Empty 1 tea bag of earl grey tea and 1 tablespoon orange rind into the batter
  12. Pour the batter into cupcake liners
  13. Bake for 10-12 minutes at 180 degree Celsius in a preheated oven
  14. Transfer cupcake tin to a wired rack and let cupcakes cool completely before serving
