Ingredients to make Vanilla Sponge Cake

  • Dry Ingredients -
  • maida 1-1/2 cup ( 3 tbsp)
  • cornflour 3 tbsp
  • baking soda 1/2 tsp
  • Baking powder 1-1/4 tsp
  • salt a pinch
  • Wet ingredients -
  • Sweet curd 1 cup
  • oil 1/2 cup
  • Powdered sugar 3/4 cup
  • Vanilla essence 1 tsp
  • Milk 1/4 cup (or as needed to adjust the consistency of the batter if it is too thick.)
  • honey 1 tbsp
  • White vinegar 1 tbsp
  • For Topping
  • almonds 3 tbsp minced or chopped
  • Brown sugar 3 tbsp for sprinkling on top before baking

How to make Vanilla Sponge Cake

  1. In a bowl take maida, cornflour, baking soda, baking powder and salt. Mix well. Keep aside.
  2. In another bowl mix sugar, curd, oil and vanilla essence. Mix well till sugar dissolves. Keep aside for 15 min. Now mix it with a beater to a smooth mixture.
  3. Now mix maida cornflour mix to the curd mixture. Mix properly so that no lumps should remain. Batter will be thick at this point.
  4. Now add milk and mix well. The consistency of the batter should be thick but pour. Preheat oven to 180 degrees C for 10 min. Grease and dust baking tin and keep aside.
  5. Now take the batter and mix honey and white vinegar. Pour the cake batter in the cake tin and sprinkle brown sugar and top with almonds. Do not mix.
  6. Place baking tin in pre heated oven and bake for 40 min or till done.
  7. Take it out of the oven and let it remain in the cake tin and let it cool completely.
  8. Take it out of the tin.
  9. Slice and serve.
