Ingredients to make Dates And Foxtail Millet Flour Peda

  • 3/4 cup seedless dates
  • 1 cup foxtail millet flour ( thinai flour)
  • 1/2 cup unrefined cane sugar (naatu sarkkarai)
  • 1/2 tsp cardamom powder
  • 2 tbsp ghee
  • few sliced almonds

How to make Dates And Foxtail Millet Flour Peda

  1. Pulse the dates in a mixer for 3 to 4 times. (Don't make like a paste) or chop it finely.
  2. Heat a drop of ghee in a pan and add the foxtail millet flour. Keep in low flame and fry it until a nice aroma comes out. Allow it to cool.
  3. Heat the naatu sarkkarai(cane sugar) in a non stick pan with 1/4 cup water. When it starts boiling, add the dates and cook for some time.
  4. When it comes to sticky consistency, add 1 tbsp ghee and the fried foxtail millet flour (thinai flour).
  5. Stir continuously until it starts leaving the sides of the pan. Finally, add the cardamom powder and spread it in a greased plate.
  6. Garnish with sliced almonds and cut it into small pedas.
  7. Yummy and healthy dates and foxtail millet flour pedas are ready.

My Tip:

I recommend store-bought foxtail millet flour for this sweet because at home, it is not possible to grind it to a fine consistency. If you are using hard dates then soak it in the warm milk for 20 minutes.
