Ingredients to make Orange curd sauce (kadhi)with coriander foxtail millet

  • 150 gm coriander chopped
  • 2 tbsp mint chooped
  • 1 tomato diced
  • Salt to taste 1/2 tsp black pepper
  • 1 cup foxtail millet
  • 1/2 cup rajama beans boiled
  • 1 tbsp lemon juice
  • 1 cup fresh orange juice
  • 2 tbsp curd
  • 1 tbsp chickpea flour
  • 2 cloves garlic
  • 1 teaspoon olive oil
  • 1 green chilli
  • Pinch of turmeric powder
  • spring onion and punched roasted papad

How to make Orange curd sauce (kadhi)with coriander foxtail millet

  1. Soak the foxtail millets for 20 minutes and pressure cook for 5 minutes
  2. Add tomato,coriander,salt,lemon juice, pepper to this and keep aside.
  3. For the sauce : Mix orange juice with curd and gram flour [besan] and make a thin batter.
  4. Heat some oil in a pan, once heated add garlic cloves and curry leaves.
  5. Add the curd batter, salt , green chilli and turmeric powder, cook for 5 minutes.
  6. Assembly : Using a ring or round mould, assemble the cooked millet and boiled rajma [kidney beans] in layers, spread the orange sauce all over it, serve hot.
  7. I have used a hand punch to poke some holes in the papad and then roasted it, then plated it on the millets as garnishing.
  8. Garnish with some orange segments, green chilli and spring onion as well.
