Easy Eggless Fruit Cake

Ingredients to make Easy Eggless Fruit Cake

  • Brown sugar - 1 cup
  • water - 240 ml
  • Unsalted butter - 60gm or 1/4 cup
  • Mixed dry fruits - 1/2 cup chopped (raisins, dates, prunes)
  • cinnamon - 1 stick
  • Vanilla - 1 tsp
  • oil - 2 tsp
  • Cocoa powder - 1.5 tbsp
  • all purpose flour - 1 cup + 1 tbsp
  • baking soda - 1 tsp
  • Baking powder - 1.5 tsp
  • nutmeg Powder - a pinch
  • Chai masala - 1/4 tsp
  • Chopped nuts - 1/4 cup (almonds, cashews, walnuts)

How to make Easy Eggless Fruit Cake

  1. Pregeat oven at 160. Line a loaf pan.
  2. Mix brown sugar, water, butter and chopped dry fruits in a saucepan. Put it for a boil with cinnamon stick on low flame; around 8-10 mins.
  3. Once boiled, let it cool well and remove the cinnamon stick. Add vanilla, oil, cocoa powder and mix well.
  4. Sift the flour, baking powder and baking soda. Mix it together. Mix the nutmeg powder and chai masala.
  5. Fold the dry ingredients to the wet, in 2 batches. Fold the chopped nuts.
  6. Put in loaf pan and bake for 45 mins.

My Tip:

Chai masala to add spice to this fruity mix.
