Ingredients to make Tamarind Date Chutney (Imli ki Chutney/Sonth)

  • 200 gms tamarind, seeded
  • 1 cup sugar
  • 1 cup boiling water
  • 1 tablespoons roasted ground cumin seeds
  • 1 teaspoon black salt
  • 1 teaspoon red chilli powder
  • 1 teaspoon Ground black pepper
  • 1/2 teaspoon ginger powder
  • 5 dates, seedless
  • salt to taste

How to make Tamarind Date Chutney (Imli ki Chutney/Sonth)

  1. Break the tamarind into small pieces and soak in boiling water for one hour.Soak dates in a separate bowl.
  2. Mash Tamarind into a pulp and strain, pressing the tamarind into the strainer to remove all the pulp.
  3. Chop dates.
  4. In a heavy bottom pan combine the tamarind pulp, sugar, dates, cumin. Black salt, red chilli powder, ginger powder and dates and cook over low flame for 20-30 minutes till thick.
  5. Taste and adjust salt. Pour into clean jars when cool.
  6. Chutney can be refrigerated for two to three months.
