ABOUT Wholewheat Galette With Mushroom Filling RECIPE

This wholewheat galette with vegetable filling has a pizza-like taste and texture. It is a truly delicious and nutritive bake. This galette has the goodness of vegetables like broccoli, mushrooms and capsicum. I have included butter and cheese too, to get that soft and gooey texture. This makes it interesting for kids too.

Ingredients Serving: 8

  1. For the crust:
  2. Wholewheat flour 3/4 cup
  3. All purpose flour 1/4 cup
  4. Butter (cold) 1/3 cup
  5. Salt 1 tsp
  6. Mozzarella cheese 1/4 cup
  7. Cold water 1/4 cup
  8. Vinegar 1 tbsp
  9. For the filling:
  10. Mushroom (sliced) 4
  11. Broccoli florets 3
  12. Garlic (sliced) 4
  13. Onion (sliced) 1/4
  14. Tomato (small, sliced) 1
  15. Capsicum (chopped) 2 tbsp
  16. Mozzarella cheese (grated) 2 tbsp
  17. oil 2 tbsp
  18. Salt as required
  19. Red chilli (whole, crushed) 1
  20. Lemon juice from half a lemon
  21. Oregano 1/2 tsp
  22. Coriander leaves 1 sprig
  23. Sesame Seeds 1/2 tsp
  24. Egg 1 (optional, for the glaze)

Instructions

  1. Sieve and combine the flours together with salt in a bowl. To this add cold butter cubes and mozzarella cheese.
  2. Rub thoroughly until all the butter and cheese combines with the flours and forms small crumbs. Now add cold water little by little until it forms a soft dough.
  3. Add in the vinegar too and mix. Cling wrap the dough and refrigerate overnight.
  4. For preparing the filling, blanch the broccoli in salt water for 2-3 minutes. Once drained, slice them.
  5. Heat oil in a pan and saute, the garlic, onion, and mushrooms with little salt, until mushrooms turn to a light brown color. Next add in the broccoli slices and saute for 2 minutes, and turn the flame off.
  6. Place the dough and flatten with your clean palms.
  7. Now transfer the rolled out dough carefully on to a greased and lined baking tray/tin. Now add half of the grated mozzarella cheese to this dough, leaving space of around 1 inch along the border.
  8. Place the sauted mushrooms, broccoli, onions and garlic on top of it. Next add in the tomatoes, capsicum, and red chili.
  9. Top it with the remaining mozzarella cheese. Now fold the edges carefully towards inside.
  10. Give a coating of egg wash and sprinkle with sesame seeds. Preheat the oven to 180 degree centigrade.
  11. Bake for 50 minutes.
